Ekwang takes patience: cocoyam is grated, wrapped leaf by leaf and left to simmer slowly in palm oil with smoked fish and crayfish until everything melts together. It is one of the dishes our kitchen in Bamenda is known for.

Grated cocoyam parcels in a rich palm oil sauce with smoked fish. Say the word in your order notes if you want it milder on pepper.
